Black tea – 90–95°C
Green tea – 70–80°C
White tea – 75–85°C
Yerba mate – 70–80°C
Herbal infusions – water at 90–100°C
Remember: water that’s too hot can make the infusion bitter, while water that’s too cold won’t bring out the full flavor.
